Cookie cake is a favorite for kids and adults of all ages. It is so quick to make, and really fun to decorate!

- 1 cup Spectrum Organic Shortening
- 1 tbsp Molasses
- 1 1/2 cup Granulated Sugar
- 2 1/2 cup All-purpose flour
- 1 tsp Baking soda
- 2 large Eggs
- 12 ounces Chocolate chips
- 1 1/2 tsp Vanilla extract
- 1 tsp Salt
Preparation
Preheat oven to 350.
Cream shortening, vanilla, salt, baking soda and sugar until light and fluffy. Add eggs, one a time, beating until well incorporated. Scrape the sides. Mix in flour and then stir in chocolate chips.
Spread batter out onto a cookie cake pan (a 14 inch round foil pan works perfectly for this). Leave some space for the cookie cake to spread to the edges. Place on top of a cookie sheet and bake for about 20 minutes, until lightly browned. If the cookie cake spills over the edges at all, trim the edges while the cake is still warm. If you wait until it has cooled it will crumble as you trim.
